Fierry Curry

We’ve been enjoying cool windy weather the past week so a bowl of hot curry was perfect to warm us. We had this for lunch and dinner. This is beef curry slow cooked for 4 hours on high. I seared the beef cubes first before putting into the slow cooker pot together with 1 medium onion (quartered), thumb-size ginger (sliced) and enough water to cover the beef. Halfway through cooking, I added the curry paste (Pantai brand no fail!) and freshly squeezed coconut cream and coconut milk. The potatoes, carrots and pepper were added during the last 15 minutes of cooking time. This is great with a side of fried tofu squares. The smell of this while cooking will make you wish the slow cooker was not so slow. Oh but the reward of the wait for anyone who loves spicy food is all worth it! Rich super hot sauce, tender beef and crispy tofu. Perfect! 🙂
