Fast Breakfast

Breakfast. From Tuesday to Friday, it’s a challenge for me. I can’t start the day properly without it but I barely have time during these days to prepare it. It never stops to amaze me how my mother has managed to fix me and my siblings breakfast every single day when we were growing up. I’m talking about solid breakfast food and she had to go to work, too. And read this – her office was two hours away from our home. She IS a superwoman.

Me? I work from home. So does my husband. We sleep late, we get up late. Just barely before I have to go online for a client meeting. Freaking habits, yeah. I promise when we have kids, I won’t be this lazy (so help me God). So, if you’re like me two weeks ago looking for quick breakfast ideas that you can prep hardcore fast in 20 minutes or less, let me share my list:

1. The Basics: Granola (or any Cereal) and Milk. Quick, fibrous, crunchy goodness in a bowl. That’s all we need most days. Granola and Milk

But of course, we need variety, too.

So next up: 2. Dressed-up Yogurt. We’ve actually had this before as dessert. So, for the life of me I don’t know why we haven’t made it for  breakfast until recently. Silly me. It’s 1-2-3 go! Pour the yogurt in a bowl. Add a plop or two of your favorite fruit preserves. Throw in a handful of granola. Chow.

Now, I know you can simply buy flavored  yogurt from the grocery store but this is way, way better. You can put berries, peaches, banana slices, walnuts, honey, shredded coconut…peanut butter? Myohmy. Go crazy.

3. Grilled Cheese Sandwich. Now, many people have strong feelings about this food…about what a proper grilled cheese sandwich should be, how to prepare it, etcetera. Personally, I don’t mind variations but I do prefer the classic – bread, butter and melted cheese. Although I have found it’s best to use more than one type of cheese to add more flavor. I’ve tried Edam Cheese, Cheddar Cheese and Spicy Cheese.

Prepare about 2 tablespoons of grated cheese for one sandwich. Butter one side of each bread slice. Make sure every inch is buttered because we’re serious about grilled sandwiches and we want it to achieve golden glory. If this is the first time you’re making this grilled sandwich, the buttered sides are facing out.

Now, you can make these babies  anyway that makes you happy – on the grill, with a grill pan, griddle, frying pan, oven toaster, sandwich maker or in the oven. Heck, zap it in the microwave if you want. I went with the oven. Cook until each side of the sandwich is golden brown, about 3 minutes on each side. Chomp. Grilled Cheese Sandwich

As if grilled cheese sandwich is not good enough, I found this recipe online with – are you ready for this? – maple syrup! Oh just the thought makes me excited. We’ll try this real soon.

4. Breakfast wraps or breakfast burrito or breakfast burrito wraps or whocareswhat. Whatever you want to call it, it didn’t take me 20 minutes to make them. I found the recipe at the Better Homes and Garden site right here. I halved the recipe to make just enough to fuel us, two hungry people in a rush. Here’s what I did:

Beat 2 eggs with a tablespoon of milk, a dash of salt and pepper and fresh chopped cilantro (wansoy). Then, in a pan over medium heat, scramble the eggs until barely set. Stir in cooked and chopped bacon (3 rashers) and some chopped green onions, if you have them. Remove from heat.

Warm up the tortillas in the microwave. Spoon the egg-bacon filling onto each tortilla. I had small flour tortillas so about 2 tablespoons of the filling was enough. Top with shredded cheese and salsa. I used cheddar cheese and spicy cheese with hot peppers. Finally, roll it, baby!
